In the Monti Pisani, many terraced olive groves had been abandoned because they were difficult to work and not very profitable.

Leonardo Paolino decided to go against the trend, investing time and resources in their recovery.

He has put historic olive trees back into production, restored dry stone walls and brought back care where for years there had been only decay. The relaunch of the Monte Pisano oil mill was the key step in giving this work a concrete future.
