His story does not come from a long family tradition, but from a courageous and conscious choice. In a territory rich in potential but still little explored at an international level, Sandi decided to believe in the strength of identity of Istrian oil, transforming his farm into a model of quality and vision.
In 2020, with patience and determination, he recovered ancient abandoned lands, planted native varieties such as Buža, Istarska Bjelica and Rosinjola and immediately chose to work with a modern and rigorous approach. Early harvesting of the fruits, immediate cold extraction and obsessive control of every phase of the process, with the aim of obtaining a rich, complex extra virgin olive oil that is deeply linked to the territory.
Why Today, his mill has become a point of reference for high-quality oil from Slovenian Istria and Sandi is recognized as one of the pioneers of the new generation of Istrian producers. His philosophy is based on three pillars: authenticity, sustainability and oil culture. For Sandi, being a Courageous Frantoiano means believing in the truth of the land, accepting the challenge of producing excellence away from the spotlight, bringing the story of an agricultural, traditional, proud and lively Istria to the world.
